As the title suggests, it was my birthday today. It has been a special day from beginning to end.
We enjoyed a delightful breakfast out and I had Eggs Benny with Turkey and Ham, cooked to perfection, with my son daughter and grand-daughter. It was delicious and the company undeniably the best!
I’ve always been leery of pressure cookers but I got an Instapot (which is a crockpot and pressure cooker in one) for my bday and my son and I cooked dinner in it tonight. I’ve never eaten such spectacular scalloped potatoes. Tender, flavourful and certainly memorable. My son bought me what else, cheesecake for dessert so yum all the way around.
In case your interested, here are a list of ingredients for the Instapot
4 medium potatoes sliced evenly, thinly
A small ham cut into squares (black forest)
1 1/2 C. Heavy Cream 1/2 C. Cream 1/4 C. Broth
1 C. Mozza, 1/4 cup Parmesan (fresh)
Salt, Pepper, Garlic Powder
Layer potatoes, ham, cheese and cheese sauce (for lack of a better word) and do it all again and cook for 35 minutes.
Totally fabulous and the company spectacular! What can I say? It was a wonderful day.
